The first book is among my favorites because it introduces you to the Potter universe. I like the first movie except for the chess scene. I think the books and movies would have failed if the first story had been dark or difficult for young children.
COS is a mystery story with one of the best characters -- Lockhart. Branagh is technically perfect but just not very amusing. I think it hurts the whole movie. I remember young kids in front of me in the theater leaving before the spiders. I thought it was wonderful to see eight and ten year old kids who had read the book and knew what was coming.
POA works well as a standalone movie. Why didn't it make as much money? It should have brought new fans in.
I like GOF. I also like the music. It's a shame that so much is omitted or changed, but it made money and rescued the franchise. That's more important than anyone would like to admit.
OOTP is well made, but I find Umbridge to almost as repellent as the characters do. Too much of her. Maybe they could have cut some of her and restored some of the stuff that was cut. Particularly the time turners.
HBP is about as good as adaptations get. Lots of stuff cut, but the pacing is good, and the mood is wonderful. Hooper's music serves his movies well, but it's entirely forgettable.
DH1 is nearly perfect.

Here is my list:
1. DH part 1
2. Very closely followed by HBP . . . But I'm not 100% sure about these two.
3. OotP. Yes, a much hated movie, but I don't care if it's different from the book. It was a good movie.

5. GoF
6. CoS

I appreciated things about every movie, and every book, but in my opinion the first two were weak, simple, and childish... The movies and books evolved over time until the world and the characters were rich, dense, and complex. Many layers began to appear. I think this is why HP is so wonderful -- not the imagination, the magic and the escape, but the richness of the world, and the depth of its characters. The story grows out of Hogwarts, becomes more than just a little puzzle Harry must solve. It is suddenly real, and concerns the world and all of its occupants, rather than just the question of whether Snape wants to steal the Philosopher's stone. The first few books/movies had their points... But it was really only to lead us here. I didn't like DH part 1 until my second viewing, when for some reason it all clicked together in my brain and made sense... It felt great. All of a sudden the characters and their situation is very real. I think this was definitely reaching a head from the fourth or fifth book/movie... As you clearly see. But it has reached a point where there truly is no denying that childhood is gone.
I believe DH part 2 will top my list when it comes out.

Well yes, but that was part of the master plan. Rowling did something I've never seen done in literature: she told each story from the point of view of someone the age of the characters.
There have been other book series where kids grow up, but I don't know of any where the storyteller grows with the kids.
So the first movies are appropriately juvenile. the kids are small; the adults are big; the kids don't think very far ahead and don't see the big picture.

I do think that the part with Harry and Hagrid on the motorcycle on the freeway and tunnel was a much better shot and constructed action sequence than we've ever gotten.
But again, what makes Potter great is the style and drama, and storytelling. I've come to not even care if the action is good or not. The story is great.
